Go with the XC, the other 2 are MX bikes, from what you described earlier, this would be a better fit for what you want.

I have a chance to get a 2014 300 xc for 1k less then a 2015 300 xc. Both brand new from the dealership, would the 2014 be more worth it or did the '15 add something worth paying the extra 1k for?

completely agree, rode all the new bikes and liked the 300 xc the best, 350xcf in second place

After ride 300 xc, 350xcf is too heavy..
