If it doesn't need any head work then 500 will get the job done. If it needs to have the seats cut then expect your price to double. Usually the seats need to be cut.
Does this guy have his own shop? Is it reputable? Did someone recommend him? Are his previous customers satisfied? Or is this decision based on the low low price?
These are questions you need to ask. A valve job gone wrong or taking short cuts could cost you an entire motor.
We know, we all tried to get away with the bare minimum so we could line up for our next race or ride and we know the end result of skimping out to save a $1.

It would be very unusual to have to replace the valves and not need the seats cut at the same time. If the valve faces wear they put uneven loads on the seats and cause dimples and ridges in them that have to be cut to remove so the new valves will seat correctly. If the seats are not cut when needed, the new valves will not seal correctly and thus will not last. If the seats are too worn they would need to be replaced.
This is just not a step that needs to be overlooked to have a good job done.
Of course it your dime, so either do it right the first time or expect to do it over again shortly. You call!

Professional said seats were fine, the titanium was just so wore down, i had all stainless installed and lapped.
