Why is Third Gear the best gear for most situations

I had 3, 2 strokes in a row... now I have 2, 4skins in the garage

My 300 has a 6 speed gear box

My Honda C900 has a 10 speed gearbox... I'm saying... On that bike I'm always searching for the imaginary 11th gear.

It's not always about top speed either, but more fuel economy in some cases. If I need to hang with the big 4T fuel tankers on 100+ mile dirt rides, I need better fuel economy at cruising speeds.
