I ride a 2000 Honda CR250. I have always run the stock tire size in the rear of 110/90x19. If I put a 120/80x19 on it, should there be any noticeable difference in handling or anything else?

Depends on how sensitive you are. I can feel a 120 on a small bore but your bike should have no problem turning it over. I always ran 120's on my 250t
I say run it and see, it's only a tire it won't last forever (hopefully)

I will run a narrower tire on the front to avoid the front end climbing out of ruts and plowing the berm.
