I just caught a badger and, with some difficulty, clipped it's toenails.
I have them softening up in a nice Balsamic garlic vinaigrette.
I have been saving the spleens from chipmunks that a local cat deems necessary to leave on my porch for the last three months! (I don't look a gift chipmunk in the mouth!)
I'm going to toss the spleens in a light rice flour batter with a touch of red pepper, and roll them in the badger toenails.
Then drop them in 350 F oil and deep fry just until they float to the top! Let drain on paper towels, and add salt to taste!
You have got to try this one!
